Carbohydrates

1. The largest class of organic compounds, including starch; glycogen; cellulose; polysaccharides; and simply monosaccharides. Carbohydrates are composed of carbon, hydrogen, and oxygen in a ratio of Cn(H2O)n.
2. Any of various compounds of carbons, hydrogen, and oxygen (e.g., sugars, starches, and celluloses), which are generally formed by green plants. Carbohydrates are a principal source of energy in animal feeds and are excreted if not utilized.
