Citric acid producer

One of the largest commercial uses of Aspergillus fungi is in the production of soft drinks. The extraction of pure citric acid from fruits and vegetables has proved to be to expensive, so the manufacturers have developed a way to use large vats to ferment Aspergillus niger to form artificial citric acid.
