Fatty Acids

1. Organic, monobasic acids derived from hydrocarbons by the equivalent of oxidation of a methyl group to an alcohol, aldehyde, and then acid. Fatty acids are saturated and unsaturated ( fatty acids, unsaturated). (Grant & Hackh's Chemical Dictionary, 5th ed)
2. A major building block of cellular lipids. A fatty acid is a long carbon chain that ends in a carboxylic acid (a chemical structure = -COOH)
3. Any of a class of saturated aliphatic monocarboxylic acids that form part of a lipid molecule.
4. A product of fat hydrolysis.
