Aspergillus flavus

1. Used for rice fermentation by strains of Aspergillus flavus (aflatoxin) to cause the enzymes in the kernels to breakdown the carbohydrates into simple sugars, to produce a sweetened rice drink.

2. A fungus that reproduces on cereal grains, legumes, and tree nuts. Certain strains produce the liver carcenogen aflatoxin, while certain strains are used to reduce the amount of aflatoxin and reduce the carcenogenic risk.
