Spruce tip

The new, soft, light-green growth that emerges from the ends of spruce tree branches in the spring. These tender shoots are harvested for culinary and medicinal purposes, having a citrus-like and resinous flavor. For commercial food production, the tips are harvested by hand when they are between one and three inches long, before the needles harden and turn dark green.
