Back-sweeten

To add a sweetening agent, such as sugar, honey, or unfermented juice, to a beverage like cider, mead, or wine after fermentation is complete. This process is done to increase the final sweetness to a desired level, as the primary fermentation consumes most or all of the initial sugars. Back-sweetening requires the addition of stabilizers, like potassium sorbate, to prevent the added sugars from refermenting in the bottle.
