Windowpaning

A technique used in bread making to assess the gluten development of dough, where a small piece of dough is stretched thinly until it becomes translucent enough to see light through it without tearing. This indicates that the gluten network is sufficiently developed to trap gases produced during fermentation. A well-windowpaned dough will hold its shape and elasticity.
