Lautering

A separation process in brewing that separates the sweet liquid wort from the residual spent grains after mashing. The process occurs in a vessel called a lauter tun, which has a false bottom or screen that holds back the solids. This procedure involves sparging, or rinsing the grain bed with hot water, to extract as much fermentable sugar as possible.
