Mashout

The process in brewing where the mash, a mixture of malt and hot water, is heated to a specific temperature, typically between 168°F and 172°F (75°C to 78°C). This temperature increase denatures enzymes, halting their activity and locking in the sugar profile of the wort. It also reduces the viscosity of the mash, preparing it for lautering.
