Adjunct

An unmalted source of fermentable carbohydrate, such as corn, rice, oats, or refined sugar, added to the mash or kettle in brewing alongside malted barley. Brewers use adjuncts to change flavor, color, and body, or to lower cost compared with an all-malt recipe. Mass-market American lagers use rice or corn for roughly 20 to 40 percent of the grist.
