Kräusen

A stage in the fermentation of beer, characterized by a thick, rocky head of foam that forms on the surface of the fermenting wort. This foam indicates active yeast metabolism and the production of carbon dioxide. Brewers often add a small amount of actively fermenting beer at this stage to condition a finished batch.
