Break

The coagulation and precipitation of proteins and tannins from wort during the boiling stage of brewing. Achieving a vigorous boil causes these particles to clump together, forming visible flocculation known as a hot break. A similar precipitation, the cold break, occurs when the wort is rapidly chilled before fermentation, contributing to the final clarity of the beer.
