The complete and irreversible separation of an emulsion into its constituent immiscible liquid phases. This process involves the coalescence of the dispersed droplets, leading to the formation of distinct bulk layers of the original liquids. Unlike creaming, which is a reversible separation into a more concentrated emulsion layer and a more dilute one, breaking represents the permanent destruction of the emulsion structure.
