Cream volume

The volume occupied by the concentrated emulsion layer that forms at the top of a dispersed system, such as milk, due to the upward movement and aggregation of dispersed phase droplets. This separation occurs under the influence of gravity or centrifugal force, as the density of the dispersed phase differs from that of the continuous phase. It is expressed as a percentage of the total volume of the emulsion.
