Breaking of an emulsion

The irreversible separation of a dispersed system, consisting of two immiscible liquids, into its constituent bulk liquid phases. This process involves the coalescence of the dispersed droplets, leading to the complete loss of the emulsion's structure. Separation is induced by physical methods like heating or centrifugation, or by adding chemical agents called demulsifiers that disrupt the stabilizing interfacial film around the droplets.
