Continuous phase

The medium in a dispersed system that surrounds and suspends the dispersed phase, forming a continuous network throughout the system. In an emulsion, it is the liquid in which droplets of another liquid are dispersed. For example, in an oil-in-water emulsion, water is the continuous phase.
