Cream

A concentrated layer of the dispersed phase that forms at the top or bottom of an emulsion or suspension due to gravitational or centrifugal separation. This layer is richer in the dispersed component than the bulk of the system, but the dispersed phase particles retain their individuality. Creaming is a reversible process, unlike coalescence.
