A brewing process where yeast strains, such as Saccharomyces cerevisiae, ferment at warmer temperatures, typically between 18°C and 25°C. During this process, the yeast rises to the surface of the fermenting wort, forming a thick, foamy layer. This method is characteristic of ale production, contributing to complex flavor profiles with fruity and spicy notes.
