A type of yeast, specifically a top-fermenting strain, used in brewing to produce ales, stouts, and wheat beers. This yeast ferments at warmer temperatures, typically between 15 and 25 degrees Celsius, and rises to the surface of the fermenting wort. It contributes fruity and ester-like flavors to the finished beer, distinguishing it from bottom-fermenting lager yeasts.
