Boiling point

The temperature at which a liquid's vapor pressure equals the external pressure exerted on it, causing the liquid to change into a vapor. For water, this temperature is 100°C (212°F) at standard sea-level pressure of 1013.25 millibars. Because atmospheric pressure decreases with altitude, the boiling point of water is lower at higher elevations, a factor in cooking and instrument sterilization.
