Alkaline degradation

The chemical breakdown of a substance through hydrolysis or other reactions catalyzed by a basic (alkaline) environment. This process typically involves the attack of hydroxide ions on susceptible functional groups, leading to bond cleavage and the formation of smaller molecules. Polysaccharides and proteins are particularly prone to alkaline degradation, affecting their stability and properties in high pH solutions.
