Hydrolysis

A chemical reaction in which water reacts with a compound, breaking one or more chemical bonds and often forming two or more new compounds. This process involves the addition of a water molecule, which is then split into hydrogen and hydroxyl ions that attach to the fragments of the original molecule. Many biological processes, such as the digestion of food, involve hydrolysis reactions catalyzed by enzymes.
