Hydrolases

A class of enzymes that catalyze the hydrolysis of a chemical bond, a reaction where a water molecule is used to break down a larger molecule into smaller subunits. They are classified as EC 3 in the Enzyme Commission numbering system. Examples include lipases, which break down fats, and proteases, which break down proteins.
