Proteolysis

The directed breakdown of proteins into smaller polypeptides or single amino acids. This process is mediated by enzymes known as proteases or peptidases, which catalyze the hydrolysis of peptide bonds. In bottom-up proteomics, controlled proteolysis with an enzyme like trypsin is the first step to generate peptides of a suitable size for mass spectrometry analysis.
