Proteolytic enzyme

An enzyme that catalyzes the breakdown of proteins by hydrolyzing their peptide bonds, a process known as proteolysis. These enzymes, also called proteases or peptidases, are classified into groups based on their catalytic mechanism, such as serine proteases, cysteine proteases, and metalloproteases. Trypsin is a widely used serine protease in proteomics research that specifically cleaves peptide chains at the carboxyl side of lysine or arginine residues.
