Glycosidase

An enzyme that catalyzes the hydrolysis of glycosidic linkages, breaking down complex carbohydrates like polysaccharides or glycoconjugates into smaller sugar units. These enzymes are classified based on the type of bond they cleave (e.g., alpha- or beta-glycosidic bonds) and their substrate specificity. In glycan analysis, specific glycosidases are used as reagents to sequentially remove sugar residues for structural determination.
