Alpha acid

A group of organic compounds found in hops, primarily humulone, cohumulone, and adhumulone, that contribute bitterness and aroma to beer. During the brewing process, these acids undergo isomerization when boiled, converting into iso-alpha acids. The concentration of alpha acids is a key factor in determining the bittering potential of a hop variety, typically measured as a percentage by weight.
