Malaxation

The process of slowly churning or mixing olive paste after it has been milled, a key step in olive oil extraction. This gentle agitation encourages smaller droplets of oil released from the fruit cells to coalesce into larger drops, making them easier to separate from the vegetable water and solids. The process is performed in a malaxer, a trough with spiral mixing blades, for a duration of 20 to 40 minutes at a controlled temperature.
