Burtonize

To treat brewing water by adding mineral salts, chiefly calcium sulfate (gypsum), so that it resembles the hard, sulfate-rich water of Burton upon Trent, England. The added sulfate sharpens hop bitterness, which suits pale ales and India pale ales. Burtonizing is usually done with gypsum, sometimes with Epsom salt and calcium chloride as well.
