Lecithins

A class of phospholipids that are derivatives of phosphatidic acid, containing a choline head group attached to the phosphate. They are major components of biological membranes and act as emulsifiers. Lecithins are amphiphilic molecules, possessing both hydrophilic and hydrophobic regions, and are widely found in egg yolks and soybeans.
