Esters

Organic compounds derived from a carboxylic acid and an alcohol, formed by the removal of water. They contain a carbonyl group bonded to an oxygen atom, which is in turn bonded to another carbon atom (R-COO-R'). Esters are known for their characteristic fruity odors and are widely used as flavorings, fragrances, and solvents.
