Scombroid poisoning

A type of food poisoning caused by the consumption of certain fish, such as tuna, mackerel, and mahi-mahi, that have been improperly stored and allowed to accumulate high levels of histamine. Bacteria in the fish convert histidine to histamine, which is not destroyed by cooking. Symptoms resemble an allergic reaction, including flushing, headache, and gastrointestinal distress.
