Histaminosis

A condition characterized by an accumulation of histamine in the body, often due to an imbalance between histamine production and its degradation, or excessive intake of histamine-rich foods. This can lead to a range of symptoms mimicking allergic reactions, such as headaches, skin rashes, and gastrointestinal issues. It is sometimes referred to as histamine intolerance.
