Anthocyanins

Water-soluble plant pigments belonging to the flavonoid class, responsible for the red, purple, and blue colors observed in many fruits, vegetables, and flowers. They are glycosides of anthocyanidins, meaning they have a sugar moiety attached to the anthocyanidin core. The specific color depends on pH, metal complexation, and co-pigmentation.
