Xanthophylls

A group of oxygen-containing carotenoid pigments, responsible for the yellow and orange colors in many plants, fruits, and vegetables. These compounds are derived from carotenes through the introduction of oxygen atoms, typically as hydroxyl groups. Lutein and zeaxanthin are common examples, playing roles in photosynthesis and protecting against oxidative damage.
