Appertisation

A food preservation method involving the heating of food in sealed containers to a temperature and for a duration sufficient to destroy spoilage microorganisms and pathogens. This process, named after Nicolas Appert, aims to achieve commercial sterility, allowing for long-term storage at ambient temperatures. It is widely used for canning fruits, vegetables, and meats.
