Micellisation

The spontaneous association of surface-active molecules or ions into micelles, which starts once their concentration exceeds the critical micelle concentration. For ionic surfactants it also needs a temperature above the Krafft point, below which the surfactant crystallises out instead. The hydrophobic groups gather in the core to reduce contact with water, and in water this is driven largely by the entropy gained by released water molecules.
