Hydrophobic interaction

The tendency of nonpolar molecules or nonpolar parts of molecules to aggregate in an aqueous solution, thereby minimizing their contact with water. This phenomenon is driven by the increase in entropy of the water molecules, which are released from ordered cages around the nonpolar solutes. It is a major driving force in protein folding and membrane formation.
