Polyunsaturated fatty acids

Fatty acids that contain more than one carbon-carbon double bond in their hydrocarbon chain. These double bonds introduce kinks into the fatty acid structure, affecting membrane fluidity and other biological properties. Examples include linoleic acid and alpha-linolenic acid, which are essential fatty acids in human nutrition.
