Supercooled

Describing a liquid that has been cooled below its normal freezing point without solidifying. This metastable state occurs when the liquid lacks nucleation sites for crystal formation. Supercooled water, for example, can remain liquid at temperatures below 0 °C and will rapidly freeze upon agitation or introduction of a seed crystal.
