Albumin

A class of globular proteins that are soluble in water and dilute salt solutions, and coagulate upon heating. These proteins serve as transport molecules for fatty acids, hormones, and metal ions in biological systems. Serum albumin, a prominent example, maintains osmotic pressure and transports substances in blood plasma.
