Aldaric acids

Dicarboxylic acids derived from aldoses, where both the aldehyde group at one end and the primary alcohol group at the other end have been oxidized to carboxylic acid groups. These compounds are polyhydroxylated and contain two carboxyl functionalities. Aldaric acids are typically named by replacing the "-ose" suffix of the parent aldose with "-aric acid," such as glucaric acid from glucose.
