Gluten

A composite of storage proteins, primarily gliadin and glutenin, found in the endosperm of wheat and related grains like barley and rye. When mixed with water, these proteins form an elastic network that gives dough its cohesive and extensible properties, allowing it to rise during baking. In individuals with celiac disease, ingestion of gluten triggers an autoimmune response that damages the small intestine.
