Internal phase

The discontinuous liquid phase in an emulsion, which is dispersed as droplets within the continuous external phase. In an oil-in-water emulsion, oil forms the internal phase, while in a water-in-oil emulsion, water is the internal phase. The properties of the internal phase influence the overall emulsion stability and performance.
