Alditols

Term · Chemistry · MLC-T-CHM-000374

Polyols (polyhydroxy alcohols) formed by the reduction of the carbonyl group of an aldose or ketose to a primary or secondary alcohol group. These compounds retain the carbon skeleton of the parent sugar but lack the aldehyde or ketone functionality. Sorbitol, derived from glucose, and xylitol, derived from xylose, are common examples of alditols used as sugar substitutes.
