Coacervation

The separation of a colloidal solution into two immiscible liquid phases, one of which is rich in the dispersed colloid and the other is a dilute equilibrium solution. This phenomenon often occurs in solutions of macromolecules, such as proteins or polysaccharides, under specific conditions of pH, ionic strength, or temperature. It is a form of liquid-liquid phase separation.
