Emulsifier

A substance that stabilizes an emulsion by increasing its kinetic stability, preventing the separation of the immiscible liquid phases. These agents typically have both hydrophilic and lipophilic properties, allowing them to reduce interfacial tension between the two liquids. Common examples include surfactants, proteins, and finely divided solids.
