Hygroscopicity

The property of a substance to attract and hold water molecules from the surrounding environment, typically at ambient temperature and humidity. This absorption can occur through adsorption or absorption, leading to changes in the substance's physical properties, such as weight, volume, and texture. Many salts and sugars exhibit hygroscopic behavior.
