Pectins

A group of complex polysaccharides found in the cell walls of plants, primarily composed of D-galacturonic acid units linked by alpha-1,4-glycosidic bonds. These polymers are often partially esterified with methyl groups and can contain other monosaccharides like rhamnose, arabinose, and galactose. Pectins are known for their gelling properties and are used as thickeners in food products.
