Syneresis

The spontaneous expulsion of liquid from a gel, resulting in the shrinkage of the gel volume. This process occurs due to the contraction of the gel network, which forces the solvent out of the interstitial spaces. Syneresis is a common phenomenon observed in many hydrogels and food products like cheese.
